Breakfast: October, 15

I’ve been on a bit of an oatmeal kick lately. Here’s one of my (endless!) variations:

Chocolate Banana Oatmeal:

40g oats

200g water

90g soy milk (or any other type of milk – dairy or non-dairy)

80g mashed banana, ripe

8g unsweetened cocoa powder (1 tbsp)

1/8 tsp salt

1/2 tsp vanilla extract

Combine all ingredients and cook, uncovered, over medium-high heat for 5-7 minutes. When it starts to bubble, stir occasionally.

Makes one serving, at 268 kcal

35g blueberries

This breakfast reaally filled me up. The the ripe banana adds a natural sweetness and makes the oatmeal even more filling (as if oatmeal wasn’t filling enough already!). High in calcium, dietary fiber, iron, manganese and vitamin B6 + C this is a very healthy breakfast, at 288 kcal.
