Egg-y Blueberry Oats

The addition of egg-whites adds a bit of extra protein to this lovely oatmeal. Love the combo of cinnamon, eggs and blueberries, and with all the extra tastes you won’t even notice the eggs in there!


40g oats

140g soy milk (or any other type of milk)

100g water

70g blueberries

1 tbsp egg white (15g)

1/2 tsp cinnamon

1/2 tsp vanilla extract

1/8 tsp salt

In a tall microwave-safe bowl combine oats, milk, water and salt. Microwave on high heat for 3 minutes.

Mix in a shake of cinnamon, vanilla extract, egg white and blueberries and microwave for 2-3 more minutes, until the oatmeal has reach desired texture.

Makes one serving, at 239 kcal.
