This breakfast took quite some time and effort to put together but it was definitely worth it. Not that hard to make though, just time-consuming. Inspired by a meal I saw at ‘365 breakfasts‘.
I simply cooked up
1 small ripe banana, mashed (mine was 77g)
81g soy milk
scant 1/8 tsp salt
the night before. Then in the morning re-heated and topped with
Apple ‘Pie Filling’
70g apples, diced
1/2 tsp cinnamon
a bit of water
Also made this the night before. Just baked the apple in the oven until tender – this took quite some time..
20g pomegranate seeds
Seriously one of the best breakfasts I’ve ever had. I think this might be my new favorite. Serves one very lucky person, at 243 kcal.
