Raw Vegetable Pasta

75g zucchini, sliced julienne style

40g cherry tomatoes

1 spring onion

1 clove garlic

Fresh basil + oregano

26g red bell pepper

40g mushrooms

Shave zucchini squash thinly and leghtwise with a vegetable peeler. Cut the tomatoes in half, and finely chop shallots/spring onion, garlic, and fresh basil and oregano.

In a large bowl, gently toss together all ingredients. Transfer to a platter and serve immediately.

TIP:
I like to stir-fry the zucchini in a sauté pan for a short amount of time before mixing it with the rest of the ingredients, but you can choose not to, to make it compeltely raw.
Today I also chose to sauté some mushrooms and add a bit of bell pepper + some homemade tzatzikie (made with soy yogurt) – it was very good! Took the dish to a whole other level..
