Raw Carob-Coconut Truffles

Enjoy with a nice cup of chai or green tea.

Ingredients:

55g unsalted cashews

2 tbsp carob powder (14g)

20g shredded coconut

9g pine nuts

100g dates

scant 70g water

Start by roughly chopping the cashew in a food processor.

Next add all other ingredients and keep the processor running until the dough forms into one lump/ ball. Be careful with the water; it might need a little more or perhaps even less.

Shape in to little balls and roll in carob-powder, coconut flour or crushed nuts/ almonds.

These ball with last about two weeks if stored in the fridge.

Makes about 13 ball, 20g each, at 61 kcal.

TIP:

My balls were a bit too soft to shape proberly (I probably added a bit too much water), but freezing them for a little while makes it easier to handle them.
