Remember my post on the baked oatmeal? I normally make these as a to-go snack, but today it was just what I wanted for breakfast, served with a side of banana “soft serve”. I didn’t really have time for the boatmeal to bake, since I had an early appointment, so I tried cooking it in the microwave for about 5 minutes which worked out really well. Finally I broiled it in the oven for two minutes or so to give it that nice crust. It was a bit more dense but delicious nonetheless..
