Bulgur for Breakfast
25g bulgur, cooked (leftover from yesterday’s lunch)
85g broccoli, floret + steam
7 cherry tomatoes, halved (85g)
Bring a pan with water to a boil and add broccoli. Cook for a minute or two (they should not be soft).
In the mean time sauté the tomatoes until they start to fall apart and the skin starts to loosen. Sprinkle generously with dried thyme.
Drain the broccoli but reserve some of the liquid.
Add broccoli and left-over bulgur to the tomatoes and sauté until vegetables are cooked to your liking. Just before serving add a few teapsoons of the broccoli water and serve while steaming hot.
So good and healthy, at 126 kcal.
