Ever since saw the cauliflower sushi at ‘Good Look Food‘ a while back I have wanted to make my own sushi with cauliflower rice, and when I got a ‘Sushi Kit’ for christmas, I finally made it a few days back. Using caulifower “rice” as substitution for regular rice in so many other dishes I can’t believe I didn’t think of it myself.
The rice
300g cauliflower, grated or “riced” in a food processor
about 2 tbsp rice vingar (or balsamic vinegar)
Place the “riced” cauliflower in a microwave-safe dish and cook covered for 2-4 minutes or until tender. Mix in a bit of rice vinegar and spread out on a plate or parchment paper. Let cool completely
Makes enough rice for two rolls.
The Sushi
2 nori sheets
two servings of cauliflower “rice”, cooled
vegetables of your choice (I used 1/2 (50g) avocado and 1/3 cucumber)
wasabi paste
soya sauce
Make the sushi as you normally would, stuffing with cauliflower “rice” instead of the regular sushi rice.
Serve with soya sauce and wasabi paste.
with avocado: 127 kcal for the entire roll.
with cucumber: 64 kcal for the entire roll.
