Eggs in Croquette
40g frozen spinach, thawed
2 1/2 egg white (80g)
a splash of soy milk (10g)
a few slices of grape tomato
Preheat the oven to 150 degrees celcius.
Cover the bottom of your croquette (or any other small oven-safe bowl) with frozen spinach (I thawed mine in the microwave for about 50 seconds).
In a bowl whish the egg whites with a bit of soy milk or water. Seasoning with pepper, salt and thyme if desired.
Bake in the oven for 15-25 min, checking every now and then to see if the egg has startened to firm up. Be careful not to overcook.
Also when the egg whites had set just a tiny bit I garnished with some tomato slices and kept cooking the egg.
This turned out so nice and moist! at 62 kcal. (so eat something else besides this dish!)
