I had this dish while visiting ‘Givskud Zoo’ i Denmark – they had the loveliest buffet – and knew that I had to recreate my own version. I actually like to eat it as it is; no rice or anything, but sometimes serve it over cauliflower rice.
1/2 onion (about 40g)
juice from 1/4 lemon
1/2 tsp salt
2 pieces of chicken breast (about 150g each)
1 1/2 beef tomato (about 300g) – you can use the same amount of canned chopped tomatoes if desired
1 red bell pepper
1 1/2 spring onion/ scallions
4 tbsp tomato puré (concentrate)
1 chicken or vegetable bouillon
200ml boiling hot water
2-3 tbsp peanut butter
Chop the onion and cut the chicken breast in large chunks.
Melt some coconut oil in a sauce pot over hugh heat. Add onion, chicken, salt and lemon juice and let the chicken brown, stirring frequently.
Finely chop tomatoes, bell pepper and spring onion (put the top of the onion, the green stuff, aside for later) and add to the pot along with the tomato puré and bouillon+water. Stir until the bouillon has dissolved.
Let simmer, covered for about 30 minutes.
Just before served add the tops of the spring onions and peanut butter. Stir until peanut butter is evenly distributed.
